Inihaw na Liempo (Filipino Grilled Pork Belly
Ingredients
For the Marinade:
2lbs (about 1kg) pork belly, sliced into 1/2 to 1-inch thick pieces
1/2 cup Kikkoman Soy Sauce
1/4 cup calamansi juice (or juice from 1 lemon or 2 tbsp vinegar)
4 cloves garlic, crushed or minced
1/2 medium size onions, minced
3 to 4 thai chili (siling labuyo)- optional
1/2 tsp ground black pepper
1 tsp salt
1/4 cup banana ketchup (optional, for color and a touch of sweetness) or use brown sugar
1 tbsp cooking oil (for basting mixture)
For the Dipping Sauce (Sawsawan):
1/2 cup white or rice vinegar
2 teaspoons freshly minced garlic
1 small thai chili (siling labuyo), thinly sliced (optional)
Preparation
2lbs (about 1kg) pork belly, sliced into 1/2 to 1-inch thick pieces

Combine marinade ingredients with pork belly and refrigerate at least 3 hours or overnight.
1 tbsp cooking oil (for basting mixture)
Pour out marinade liquid into a small sauce pan and boil for 3-5 minutes, mix with brown sugar and add oil to marinaded pork belly.
Preheat and oil grill grates if using the grill to cook.
Grill pork belly for 5 minutes per side.
Baste and continue grilling, turning occasionally, until cooked through and slightly charred (about 4-5 minutes per side).
Rest grilled pork for a few minutes before slicing.
Serve hot with rice, spiced vinegar, and optionally atsara or tomato and onion salad.
Air fry version:
- Preheat air fryer to 400°F.
- Place the meat in the air fryer tray. Baste the sauce all over the meat.
- Cook for 5 to 8 minutes per side.
