Beef Pares

Beef Pares made with Kikkoman. Made with umami goodness.

Ingredients

750 gms 2inch cubed Beef Kamto (Beef Flank)
choose one that has a lot of marbling.

2tbsps vegetable oil
5 pcs thinly sliced ginger
1/2 cup of diced onions
3 cloves of garlic minced
3 pieces star anise
3 pcs bay leaves
1 tsp of 5 spice powder
1/4 cup or rice wine (optional)
1/4 cup of Kikkoman Soy Sauce
1 tbsp Kikkoman Soy Sauce
2 tbsps Kikkoman Oyster Flavored Sauce
2 cups water
3 cups of beef stock
2 tbsps brown sugar
5 stalks of spring onions / scallions
2 tbsp cornstarch

Beef Stcok:
1kg of Beef bones
1tbsp of vegetable oil
7 to 8 thinly sliced ginger
2 tbsps of Kikkoman Soy Sauce
Freshly ground pepper
Salt to taste
12 cups of water

Preparation

Step 1
Beef stcok:
Place beef bones in a pot and add cold water enough to cover the meat.
Bring to a boil (about 15mins). This is to bring out the scums. Throw water with the scum and wash the meat

Place the bones back in to the pot. Add in Kikkoman Soy Sauce, ginger and 12 cups of water.
Bring to a boil and then cover and lower heat and let it simmer for 2 hours.
Remove the scums and oil on the surface of the soup from time to time.

Step 2
12 cups of water
7 to 8 thinly sliced ginger

Season with salt and pepper to taste

Step 3
Freshly ground pepper
Salt to taste

Before serving garnish with chopped spring onions/ scallions.

Step 4

2 tbsp cornstarch
1 tbsp Kikkoman Soy Sauce

Beef Pares:
Place cubed Beef kamto in a pot and add enough water just to cover the meat.
Let it boil about 10 mins to bring out the scum. Throw the water with the scum and wash the meat. Set aside.

Season and tenderize meat with 1 tbsps of Kikkoman Soy Sauce and 2 tbsp of cornstarch.
Mi well to ensure the meat is covered with cornstarch.

Step 5
2tbsps vegetable oil
5 pcs thinly sliced ginger
1/2 cup of diced onions
3 cloves of garlic minced

Heat up vegetable oil in a pan or wok (kawali) over high heat.
Add in the cubed beef kamto. Brown meat to seal the juices of the beef.
Add in ginger, garlic and diced onions. Continue to stir-fry until fragrant.

Step 6
3 pieces star anise
3 pcs bay leaves
1 tsp of 5 spice powder
1/4 cup or rice wine (optional)
1/4 cup of Kikkoman Soy Sauce
2 tbsps Kikkoman Oyster Flavored Sauce
2 tbsps brown sugar
2 cups water
3 cups of beef stock

Add in rice wine (if using), 2 cups water and 3 cups beef stock.
Add all the spices (start anise, bay leaves, five spice powder)
Add in the brown sugar, Kikkoman Soy Sauce and Kikkoman Oyster Flavored Sauce

Step 7

Bring to a boil. Cover and let it simmer for 1 hour in low to medium heat. When tender, increase heat to reduce the sauce and thicken.

Step 8
5 stalks of spring onions / scallions

Remove from heat and garnish with chopped scallions. Serve wiht beef stcok and garlic rice.
